Sustainability Meets “Fun” Dining at Torno Subito Miami: This Earth Month & Beyond

Torno Subito Miami is setting a standard and breaking the norms in Miami by showcasing a playful take on fine-dining (what the Michelin-recognized spot playfully presents as “fun” dining), all while taking environmental consciousness seriously.

Situated atop the stunning Julia & Henry’s and led by Executive Chef Bernardo Paladini—protégé of culinary legend Massimo Bottura—Torno Subito is proving that sustainability and contemporary cuisine can absolutely share a table.
This Earth Month, the restaurant is taking its impact even further. Partnering with Illy Coffee, Torno Subito will donate a portion of proceeds from every Espresso Martini sold throughout April to Food for Soul, Bottura’s nonprofit organization committed to reducing food waste and promoting equitable food systems around the world. One cocktail, one contribution—no compromise on taste or experience.

A Lifestyle of Sustainability
But the team’s eco-conscious efforts go far beyond a seasonal campaign. In collaboration with Miami-based Compost for Life, the restaurant has already diverted more than 1,000 pounds of food scraps from landfills, transforming waste into compost for South Florida farms. Meanwhile, used wine bottles are given a second life through Glass for Life, a local group repurposing glass materials to help restore Florida’s coastlines.
But perhaps the most impressive sustainability work happens behind the scenes—on the plate.
Elevated Dishes with a Low Footprint
Chef Paladini’s zero-waste ethos inspires every dish that leaves the kitchen. Ingredients typically discarded—from parmesan rinds to dehydrated aromatics—are turned into gourmet elements that surprise and delight.

From the very start of the meal, zero-waste dishes take the spotlight, as each guest is greeted with a No Waste Amuse Bouche. Inspired by the comforting Italian dish Pappa al Pomodoro, this first bite redefines day-old bread into a savory tomato and bread pudding, topped with béchamel foam made from Parmigiano Reggiano rinds and finished with crispy breadcrumbs.

The Milano-Portofino Risotto is another standout—infused with saffron and a rich seafood essence, it’s finished with a red powder made from dehydrated vegetable and shellfish remnants. The result is a layered, beautifully balanced dish that reflects both flavor and forward-thinking.
Local Sourcing, Global Thinking
Torno Subito is committed to sourcing hyper-locally whenever possible—from Capri Organic cheeses crafted in Naples, FL to fresh produce grown at Empower Farms in Homestead. Cutting down on long-distance food transport helps the restaurant reduce its carbon footprint whilst helping Florida’s agricultural community.
“Sustainability should be intuitive, not intimidating,” says Paladini. “We’re showing that you can have a luxurious meal, enjoy the moment, and still leave a lighter footprint.”
