  • Make a Delicious Potatoes Au Gratin

Made simply with sliced potatoes, heavy cream, and grated cheese, potatoes au gratin is the ultimate comfort food. Here is everything you need to know. This crazy-good recipe for potatoes au gratin comes from my dear friend Kelly Santoro, and it’s almost identical to the recipe I learned in culinary school. It involves layering thinly sliced potatoes with heavy cream and grated cheese in a baking dish, and then baking until the cream thickens and blankets the potatoes in a rich, creamy sauce. I’d say the dish is worthy of a special occasion — it is! — but the truth is that eating it is a special occasion in and of itself. WHAT YOU’LL NEED TO MAKE POTATOES AU GRATIN Before we get to the step-by-step instructions, a few words about the ingredients: The best potatoes to use for au gratin potatoes are russets; they have the most starch and make the creamiest sauce. You may be tempted to cut calories by using half & half or milk in place of the cream. Please don’t! This is one of those recipes that really requires heavy cream in order to thicken up. It’s important to use authentic Parmigiano Reggiano rather than domestic parmesan. You can tell if it’s the real deal by looking at the rind, which is embossed with the name over and over. (If the cheese is already grated, it should be labeled “Parmigiano Reggiano,” not “Parmesan.”) If you can’t find it, Pecorino Romano makes a great substitute. HOW TO MAKE POTATOES AU GRATIN Begin by slicing the potatoes as thinly and uniformly as possible. You can use a mandoline slicer if you have one, but I never bother. (Tip: When slicing wobbly potatoes, it helps to cut a thin slice along the length of the potato, then turn the potato cut-side down on a cutting board so that it sits flat.) Place the potatoes in a large bowl and toss with the salt and pepper. Be sure the potatoes are evenly coated. Butter a 2-quart baking dish. Arrange some of the potato slices, edges overlapping, in a single layer on the bottom of the dish. Sprinkle a quarter of the cheese over the potatoes. Pour a quarter of the cream over top. Repeat with the remaining potatoes, cheese, and cream, forming four layers. Pour any leftover cream over top. Place in the oven and bake, uncovered, for about an hour, or until the potatoes are tender when pierced with a knife and golden brown on top. The top layer of the potatoes should be beautifully golden by the time the dish is done baking but if you want just a bit more browning, feel free to stick the baking dish under the broiler for 1 to 2 minutes; just keep a close eye on them so they don’t burn! Sprinkle with fresh thyme leaves, if using, and serve. (Note: If you have a large crowd coming and plan to double the dish, you’ll get the best results by baking it in two 2-quart baking dishes instead of one larger dish. The potatoes will cook more evenly that way.) Potatoes Au Gratin By Jennifer Segal Made simply with sliced potatoes, heavy cream, and grated cheese, potatoes au gratin is the ultimate comfort food. Servings: 6 to 8 Prep Time: 15 Minutes Cook Time: 60 Minutes Total Time: 1 Hour 15 Minutes INGREDIENTS Butter to grease the baking dish 2-1/2 pounds Russet potatoes (3 to 4), peeled and sliced very thin 1-1/2 teaspoons salt 1/4 teaspoon freshly ground black pepper 1 cup (4 oz) finely grated Parmigiano-Reggiano 2-1/4 cups heavy cream Fresh thyme, for serving (optional) INSTRUCTIONS Preheat the oven to 350°F and set an oven rack in the middle position. Grease an 8-inch (or 2-quart) baking dish with butter. In a large mixing bowl, toss the potatoes with the salt and pepper until evenly coated. Arrange some of the potato slices, edges overlapping, in a single layer on the bottom of the prepared baking dish. Sprinkle a quarter of the cheese over the potatoes, and then pour a quarter of the cream over the cheese. Repeat with the remaining potatoes, cheese, and cream, forming 4 layers. Pour any leftover cream over top. Place in the oven and bake, uncovered, for about an hour, or until the potatoes are tender when pierced with a knife and golden brown on top. Let the dish settle on the counter for about ten minutes. Sprinkle with fresh thyme, if using, and then serve. Make Ahead: This dish can be assembled a day ahead; cover tightly with plastic wrap (pressing the wrap directly against the potatoes so they don’t discolor), store in the refrigerator, and bake before serving. The potatoes on top will still discolor a bit in the fridge, but it shouldn't be noticeable after baking. • Introducing Mezcalista, an Intimate Mezcal Lounge at Moxy South Beach

Two new dining and drinking venues debut at the newly opened Moxy South Beach developed by Lightstone. The stylish, playful, and cosmopolitan hotel that opened in February is already making waves for its exciting dining concepts from the founders of 1-800-LUCKY and Coyo Taco. Joining the already bustling Serena and Los Buenos, Como Como, a marisquería (seafood restaurant) and raw bar opens to the public today. Mezcalista, a sexy mezcal lounge opens for private events today and to the wider public in June. Both venues will round out the hotel’s dynamic and colorful dining and drinking scene. “Following the successful debut of Serena, we’re excited to bring the creative talents of the Coyo team to Moxy South Beach,” says Mitchell Hochberg, President, Lightstone. “The marisqueria and lounge reflect what the hotel is all about, combining sophistication with a theatrical flair to create a one-of-a-kind experience for both locals and guests. There is truly nothing like either of these venues in Miami.” Como Como, a marisquería (seafood restaurant) and raw bar channels the flavors of Puerto Escondido, Los Cabos, Acapulco, and other seaside destinations, offering an authentic new perspective on a traditional marisquería. The restaurant’s interior, by Saladino Design Studios, is a reverential space lined with stone and brick walls displaying Mesoamerican artifacts. Carved wooden doorways and wrought iron archways lead to the main dining room, where custom furnishings are crafted from leather, carved wood, and embroidered and woven fabrics. The restaurant also features outdoor dining in a lush courtyard layered with colored tilework, hanging plants, and stone gardens. The name Como Como is a play on the Spanish words for “how I eat” — a winking reference to the high level of interactivity. “When we design a restaurant, we don’t just focus on how it looks,” says Sean Saladino, Studio and Design Director, Saladino Design Studios. “It's about how the whole experience ties into the cooking itself. How the food is created becomes part of the show, becoming one living, breathing organism for the diners.” The centerpiece of the dramatic dining room is a striking copper-and-wrought-iron “fuego” (fire station), where diners can watch the whole fish they’ve selected being cooked over a wood-burning grill. Executive Chef Scott Linquist has created dishes that elevate traditional techniques with a theatrical dining experience. Many dishes feature whole grilled fish caught in local waters, such as Pescado a la Talla: snapper that is butterflied, grilled and painted with two marinades - green on one side and red on the other. Tikin-Xic is a Mayan preparation of the whole branzino flavored with bitter orange, habanero chiles, and achiote, cooked in banana leaves, and unwrapped, fragrant, and steaming, at the table. Tableside presentations add to the show, whether a traditional Caesar Salad (a dish born in Tijuana, Mexico) or hand-chopped Tartar de Pescado (fish of the day), tingling with spices. A barra cruda (raw bar) sits on a monolithic, rough-cut stone in the middle of the dining room. Dishes from the barra cruda come with a Mexican twist like oysters served with a pineapple-vinegar mignonette or a picadillo made with tomatillos and cucumbers. Como Como also features traditional coastal varieties of ceviches. At the center of the bar is a spectacular “tequila tree” sculpture made of hand-blown glass spheres and copper pipes, symbolizing the distillation process that transforms the blue agave plant into tequila and mezcal. Tequila travels through this dramatically lit forest of glass and metal until it is dispensed by bartenders into creative cocktails. “At Como Como, we’ve created an unparalleled experience in Miami,” says Alan Drummond, Partner, Coyo Group. “Fresh, local whole fish is prepared directly in front of diners from the fuego, elevating the seafood traditions of Mexico. When you combine that with the immersive design of the restaurant, it provides an environment that truly feels like you are being transported to a different place.” Other dishes on the dinner menu include Alambre al Pastor: scallops or pork tenderloin grilled on skewers with pineapple and spring onions, a variation on Mexico City’s beloved al pastor tacos; a rotating selection of traditional Oaxacan-style mole sauces; and meat dishes, including Chuletón (ribeye steak), Filete (filet mignon), and adobo marinated rack of lamb all of them flame-grilled in the fuego and served with a variety of house-made sauces and condiments. Vegetable dishes are roasted in the fuego’s Josper charcoal oven and served in cast-iron pans, including Esquites, roasted corn with homemade garlic aioli, morita chile, and cotija cheese; and Charcoal Oven-roasted artichokes with roasted jalapeño aioli, buttery herbed bread crumbs, and charred lemon. Many dishes are accompanied by tortillas, ground and pressed in-house and cooked on a comal, the traditional Mexican griddle. Opening for private events today and to the wider public in June is Mezcalista, a sexy, intimate lounge featuring an impressive collection of 100 mezcals and its derivative, tequila. Space is accessed by a discreet entrance in the back of Como Como. Expert mezcaliers will be on-hand to engage with guests and explain the different floral and smoky notes. The lounge’s vibe ranges from intimate and relaxing early in the week, with mezcal connoisseurs sipping attentively, to fun and exclusive on the weekends, with performances from some of the world’s top DJs and perhaps some late-night dancing on the walnut and leather banquettes. Saladino Design Studios designed Mezcalista as a catacomb-like space dedicated to the ancient traditions of mezcal, the revered spirit first distilled by the Pre-Hispanics centuries ago. Copper shelves hold beautiful glass bottles of mezcal and tequila. From the foyer, guests proceed past an arched doorway into a seductively lit lounge with banquettes upholstered in leather and velvet. Behind a bar topped with black Nero stone, a terracotta wall displays mezcal bottles illuminated from below. Adjacent to the lounge, a velvet-draped, stone-walled tasting room provides an intimate setting for private parties. Award-winning mixologist Christian Rubio, whose hospitality experience ranges from Europe and Mexico to Miami, created Mezcalista’s specialty cocktails. Rubio is known for deftly combining Mexican herbs, fruits, and spirits in his cocktails. For more information on Como Como or to make a reservation, please visit http://www.comocomomiami.com. • Inaugural Greyhound Pride Scholarship Awarded to Local High School Student

Emmanuella Coupet, a senior at Lincoln Park Academy High School (“LPA”), has been awarded the Greyhound Pride Scholarship in the amount of $2,500. Coupet is the first recipient of the scholarship which will be awarded to qualified LPA graduates on an annual basis. Created by 3 alumni of LPA: Natasha Harrison, Summer Barnes, and Serena Spates, the scholarship opportunity is offered to black female LPA seniors who exhibit exemplary academics, community service, and other achievements. Natasha Harrison, Greyhound Pride co-founder says, “We are all proud LPA Alumni and, while we knew there may be some pushback regarding the criteria for our Greyhound Pride Scholarship applicants, we recognized a specific area of need and decided there is nothing wrong with us focusing on a group we feel is underrepresented and/or that we can directly relate to.” Created with the belief that success comes in many forms, the scholarship can be used towards tuition for a 4-year university, community college, trade/technical school or even to start a business. “Today there are so many more paths to success available to high school students after graduation and we wanted to provide a scholarship that would offer financial support to an exemplary student in whichever path they decide to take.” says Serena Spates, Greyhound Pride co-founder. Coupet, who carries a 5.1 weighted GPA, will use the scholarship to continue her education this Fall at the University of Central Florida. “I am a first-generation Haitian American and the first of my family to go to a four-year university. I aspire to continue my education to earn a graduate degree in biomedical sciences and work in either pharmaceutical manufacturing or medical research. This scholarship will be used to ease some of the financial strain of paying my way through college,” says Coupet. Coupet, selected over several applicants, also serves as a STEM mentor to middle school students in the LPA STEM and Buds chapter. “I want to inspire young girls of color and help grow their enthusiasm for STEM. The effort to mend the gender and diversity gap begins with seeing someone who looks like you be successful and break boundaries in STEM” wrote Coupet in her application essay. These words stood out to co-founder Summer Barnes who says “Coupet was more than qualified to receive the scholarship. Not only does she have outstanding grades and a demonstrated passion and drive for her area of educational focus, but she is well rounded as well. Ms. Coupet has over 100 volunteer hours, has overcome personal adversity, and recognizes the importance of being a positive influence for other young women of color.” In addition to the monetary award, Coupet and future scholarship recipients will receive the opportunity for mentorship. • Tyler Ellis Introduces SS21 "Miami" Capsule Collection

For Summer 2021, Tyler Ellis, the Los Angeles based accessory designer and daughter of fashion icon Perry Ellis has launched a capsule collection of beach and poolside accessories which compliment the red carpet clutches that she is internationally renowned for. Combining the designer’s signatures of discerning luxury, functional design and artisanal craftsmanship, the new line draws its inspiration from Miami. "The ‘Miami’ Collection was inspired by the tropical day-to-night scene that one experiences when living Miami’s seductive "La Vida Loca" lifestyle. The intricately designed leather/patent leather trimmed PVC bags offer a water resistant durability perfect for sipping champagne by The Faena’s exclusive pool and transition flawlessly for a late dinner at Carbone. The ‘Miami’ Collection is also ideal for sporting events and concerts as they are fashion conscious, available in an assortment of “team” colours and stadium approved.” Tyler Ellis Each design from the new capsule is hand-crafted by indigenous Italian artisans in the famed leather region of Le Sieci in Tuscany, and constructed from a reconstituted PVC derived from recycled plastics from post industrial scrap. Due to the international Co-vid travel restrictions, Tyler was unable to access new material samples from Lineapelle, the bi-annual leather fair in Milan, and instead chose to repurpose hides from her existing archive by adding a laminated coat to update the texture and appearance of the leather. These reconditioned leather swatches originally sourced from specialists Hermes Cuirs Precieux (the vertically integrated supplier division of the French fashion house) were used to make the water resistant leather accents that frame the “Miami” collection of bags. Tyler founded her eponymous label in 2011 after realizing that the market for luxury handbags was largely dominated by brands controlled by the global conglomerates and that there was a niche in the market to create an independent label whose design and quality could rival or match those of the big fashion houses and offer the consumer a product that was both individual and authentic without a big logo. Today the Tyler Ellis brand is well-known in multiple luxury circles and her handbags and clutches have become a red carpet staple among A-list celebrities like Cate Blanchett, Oprah Winfrey, Jennifer Lopez, Lupita Nyong’O, Rosie Huntington Whiteley and Kylie Jenner to name a few. The new Tyler Ellis “Miami" range is available at tylerellis.com and farfetch.com Prices range from $1400 to $3800. By ML Staff. Images courtesy of Tyler Ellis

  • Florida Mid-Century Modern Kitchen by Studio 818 Featuring "Sonneman" Lighting

When Fort Lauderdale-based firm Studio 818 designed and developed a move-in ready custom home from the ground up on a corner lot, they looked to Southern California’s mid-century modern homes for inspiration. A corner lot normally presents challenges with privacy and a lack of light flow into the interior of the home. A narrow corner lot like the one the home sits on also allows passers-by to see three out of four sides of the structure. In their visits to Palm Springs, the design team noticed the majority of homes built during the mid-century modern era maximize privacy while creating a sense of openness when inside the home. They integrated a private street-facing façade that combines solid walls, linear wood fencing, and green walls to create privacy for the home. Concrete walls visually anchor the garage/guest house to the main house while providing privacy for the pool and outdoor living areas. To allow light to flow freely throughout the interior of the home while maintaining privacy, Studio 818 incorporated another attribute common to mid-century modern architecture. They designed a system of clerestory windows that span the perimeter of the exterior walls, flooding the interior spaces with light. The roof structure was precision-engineered, allowing the interior ceiling to flow seamlessly through the clerestory windows into the underside of the exterior cantilevered roof. The cantilevered roof structure was a common feature with the original mid-century modern architecture of the 20th century, but this was a major engineering challenge due to the structural requirements to meet South Florida’s hurricane-related building codes. A specially-designed truss system met the team’s aesthetic goals but also provided the exacting tolerances required to achieve the precise positioning of the clerestory windows around the entire perimeter of the home. An added benefit is the energy efficiency of the sealed attic system the home employs. The open concept kitchen adjacent to the dining and living areas features sleek, deep green floor-to-ceiling cabinetry on one wall, contrasted beautifully with modern wood cabinetry and white tile on another. An island crafted entirely of stone with dramatic veining anchors the space. A minimalist matte black Thin-Line pendant from SONNEMAN–A Way of Light provides downlighting over the island and complements the black barstools and sink fittings. From inside the home, Studio 818 focused the design on the dramatic views of the pool and private outdoor entertainment area. They designed 10-foot full-height windows and a sliding door system overlooking the pool in the open concept kitchen/dining/living area. Many iconic mid-century modern homes included a structural wall that ran through the heart of the home. These walls typically extended through the outside of the home, seemingly penetrating the exterior walls. These structural feature walls were often clad with a stone, linear brick or articulated block to add interesting texture. Studio 818 incorporated this structural feature wall design with a nod to the tropical setting of South Florida using limestone imported from Spain. The custom fabricated stone has a unique texture with crustacean fossils embedded throughout which provides a subtle tie-in with the nearby Atlantic Ocean. A pavilion effect on the rear of the was more done out of necessity due to site conditions than being rooted in a design intent. The elevation of the lot pitches significantly from North to South. The separate garage/guest house being on the South end of the property required a grade transition from the garage floor elevation to the floor elevation of the main house. The steps run not only the full width of the main house, but also wrap around both sides of the home to create a ‘pedestal’ effect. By ML Staff. Image courtesy of Studio 818
