  • Flamed to Perfection: Los Fuegos by Francis Mallmann

    If you’re looking for an Argentine parrillada in Miami, you don’t have to go very far, especially if you’re already staying at the oceanfront Faena Hotel centrally located in the heart of Miami Beach. Down the hall from the luxurious Faena lobby lives Los Fuegos, which is Francis Mallmann’s creation. The award-winning Argentine grillmaster has a passion for cooking and a love for charred meats–each recipe is cautiously curated to perfection. Using local ingredients, he manages to present a dish that is both rustic and sophisticated. Who knew grilling could be so nuanced? Mallmann’s recipes manage to keep what we love most about Argentine cuisine, while adding a little bit of that Miami Beach flair to spice things up. Every dish and cocktail is beautifully presented. Precision is something that has been mastered at Los Fuegos–afterall, grilling is all about timing, and in this kitchen not a minute is missed. You could walk into Los Fuegos and have a feast by simply indulging in a variety of appetizers. Nothing says Argentine cuisine like empanadas. The Wood Oven Empanada is a must-try at Los Fuegos. These little bites of heaven are made with prime rib and served with a tomato and onion sauce, and although the sauce is delicious, the empanadas stand on their own. Another outstanding appetizer is the Beets. Although it might not sound super exciting, these beets are absolutely mouthwatering. Cooked in ashes, this colorful dish has great texture and flavors. The pistachio yogurt compliments every bite, making you come back for more. Finally, the Butternut Squash at Los Fuegos is outstanding. Drizzled with shaved black truffle and topped with a parmesan cream, this butternut squash is warm, moist, and sweet–it’s a pleasant surprise amongst a superb collection of dishes. But, if a parrillada is what you came from, then a parrillada you shall get at Los Fuegos–afterall, there is no better place to get it. There are three parrillada options on the menu, all which come served on a tabletop grill and are great for sharing. The meat, fish, and mixed parrilladas are all wood-fired versions of parrilladas and come served with domino potato, roasted sweet potato, criolla and chimichurri sauce. In the Wood Fired Meat Parrillada you’ll find the iconic skirt steak, prime ribeye steak, lamb, chorizo and morcilla, and in the Wood Fired Fish Parrillada you’ll find the branzino, seabass, snapper, prawns, and octopus. The Mixed Parrillada is a collection of both—maybe the best of both worlds. In addition to parrilladas and amazing appetizers, Los Fuegos also has a strong selection of main dishes. Mallmann’s Beef Tenderloin Milanesa, is inspired by Mallmann’s mother and is the only dish he brings to all his restaurants—this dish makes you feel just at home. Another menu-favorite was the Chilean Sea Bass. Cooked in the wood oven, this flaky fish served with crispy black rice is a light delight.   • Broward County Public Schools Offers Free Breakfast and Lunch to all Students

    Broward County Public Schools (BCPS) is pleased to announce it is offering free breakfast and lunch to ALL District students during the 2023/24 school year through the Community Eligibility Provision (CEP) and a new pilot program for Universal Free Lunch. Community Eligibility Provision: Through the CEP program, BCPS is providing free breakfast and lunch at no cost for all students at 180 eligible District schools. The U.S. Department of Agriculture offers CEP to schools where 40% or more of the student population qualifies for programs, such as the Supplemental Nutrition Assistance Program, Temporary Assistance for Needy Families, Medicaid and Extension of Benefits. Families at these schools do not need to complete an application to participate. Universal Free Lunch Program: Beginning this school year, BCPS will pilot the Universal Free Lunch Program in the remaining 47 non-Community Eligibility Provision (non-CEP) schools. The Universal Free Lunch Program pilot will provide reimbursable lunch meals to all students in non-CEP schools, regardless of students’ eligibility. To sustain the Universal Free Lunch Program Pilot and to be eligible for additional District benefits, parents are urged to complete the online application for Meal Benefits and the Income Survey Form. Both forms are available at www.myschoolapps.com. For assistance with completing the forms, families can contact the Food and Nutrition Service Department at 754-321-0250.     Miami Living Magazine was honored to engage in an exclusive interview with the esteemed filmmaker Chris Robert. Known for his distinguished work on acclaimed films such as "Dallas Buyers Club" and “The Big Wedding,” Chris brings a fresh and vibrant energy to the screen. With his upcoming feature film "Expectations" generating buzz, we eagerly anticipated diving into the captivating world he has created. But there's more to Chris than his blockbuster success; he is a humble, kind-hearted storyteller with a passion for making a difference. Get ready for an illuminating exploration as we delve into the depths of Chris Robert's inspiring journey as a filmmaker. ML: Hey Chris! We're thrilled to chat with you about your upcoming film “Expectations”. Can you give us a sneak peek into the unique elements that make it stand out from the crowd? CR: These days, Miami is like my backyard. So it’s really exciting to have the opportunity to connect with you all at Miami Living! So far, I’ve found that South Florida amounts to so much more than all of the positive things on the surface. The colors, flavors, and people are so vibrant. There’s nowhere quite like it anywhere else in the world. The same can be said about my upcoming film, "Expectations". We had a saying when making this film, that our endeavor was to bring the classic Charles Dickens novel to a new generation and a new audience. I think we did just that, trading in what was once the drab and gray Victorian England of the traditional literature into a vibrant winter wonderland of contemporary characters that feature bright colors, and even more luminous personalities. No one needs to be familiar with the source material to go on this ride. Just be ready to find the love of a found family of siblings who have chosen to hilariously compete with one another for an enormous inheritance, while being snowed in during a holiday getaway where there might be a questionable death, or two. You know, the usual entertaining stuff to watch as it plays out. ML: "Expectations” features a diverse and talented cast. How did their unique personalities and backgrounds contribute to the on-set vibe? Any memorable moments you would like to share? CR: The characters of Expectations are only as fun as they are because they were all brought to life by the extremely talented cast that we were so fortunate to assemble and collaborate with during this cinematic journey. And you’re entirely right, all of them brought unique, and diverse personalities and experiences, which we leaned into when bringing the characters to life. I grew up internationally, and so much of the casting was done to reflect the way that I’ve had the pleasure to see the world. Featuring a multitude of various ethnicities, cultures, and accents. Even Estella, as played by the dynamic Blu Hunt, can be seen in a different way than ever before in any other adaptation of Great Expectations. Because we had the fortune of visiting this collection of characters fresh and anew in their 20s and in our modern society of 2023, we had the unique opportunity to show them all growing over the course of their weekend together. I’ve found, at least in my experience, we often have seminal moments in our lives that can change the entire course or path that we are undertaking. This weekend does that through hijinks and humor, but also because every single character finds themselves in a new place at the story’s end. All thanks to this delightful group! As far as memorable moments, I fear there are too many to share without giving away too much of the story. But I will say, if you enjoy Samuel Arnold’s cheeky and comedic chops on Emily in Paris, you’ll be very excited to see an entirely different and hilarious performance as he portrays his character, Bernard. MLM: "Expectations” has been described as a film that makes a difference. Can you elaborate on this? And in what ways do you believe cinema has the power to create impact and influence society positively? CR: At the very least, I sure hope that Expectations creates some laughs! But in sincerity, the film is really an exercise in identifying something that I’ve come to very much believe in, including in regards to my own life. We’re all so fortunate to be touched by the many individuals and lives we encounter. Many of those people become our found family, which can be just as important as the one we are born into. Expectations is really a journey we’re all going on, to find not only a healthy way to express ourselves, because that’s incredibly important, but also how we fit into our societal and familial units without friction or fray. Over the course of the film, you’ll see all of the characters both familiar from the source material, and new, struggle with this notion and how it affects their own individual identities. For my part, that’s okay, because I think that’s a journey we all undertake in our twenties. There’s nothing wrong with taking time to answer the questions of who we are, what we stand for, and where it is we’re really going. We’re all so lucky to live in an age where we’re afforded the time and opportunity to do just that. For these characters, who are all adopted siblings of a sort, to be thrust together after years of feeling a sense of competition with one another for success or funds from their guardian benefactor, to have to deal with one another in person and face to face is now a shock, both dramatically, and in a comedic sort of way with how it all plays out. But this notion of competition and what we all feel we must do to be heard and get ahead is very real, and also understanding the vows we hold to ourselves and what is healthy and what is not is just as real and important to me today as it was when I wrote the script. I think cinema is one of the artistic tools we have in society to showcase these real issues that many of us struggle with, and like this case and this film, hopefully bring some solace and comfort through laughter as we all work our way through it, knowing we’ll be better on the other side. At least our characters in Expectations certainly hope that’s the case! MLM: Your personal journey as an orphan has undoubtedly shaped your perspectives on family and belonging. How do you infuse these themes into your projects, including "Expectations,” and why are they significant to you? CR: I’ve had the luxury and privilege of being able to work on many films in my career, and the ones that have always connected with me the most are the ones about community and family. I learned a long time ago when I was a child that no one can control how they start their journey. That part in life is not up to us. But where we go, and how we get there, well we certainly have a say in that! I’ve been really fortunate to make many relationships along my journey, and most of those people are still with me in my life today. I think what’s critical for all of us is to take the time to reflect on the type of energy we all permit into our lives. There are certain people and situations we all will vibe with, and there’s nothing wrong whatsoever when there are certain circumstances we just don’t vibe with. Being able to determine that, and determine the type of individuals we let into our lives is so important. For my part, it’s because of the strength of those relationships that I’ve made that I get the opportunity to create characters in my projects that are both on point, and off the mark. Just like people, no one character is just plain good or bad. We’re all shades of the environments we come from and the tapestries that our lives weave. Because I’m always interested in understanding these fundamentals, and trying to accept the many differences of the people around me, I feel very fortunate to get to utilize all of that material into my films. You’ll find Expectations is not an exception to this whatsoever. In fact, if you pay very close attention, you might find glimmers of people in my life and artists I’ve previously collaborated with inside each and every character. MLM: You are intriguingly known for bringing a unique superpower to every project you sign on to. What is your special superpower charge and how does it shape your approach to filmmaking? CR: I’m flattered to hear that! If only I did have a superpower, perhaps I could use it to make more of a difference. But in lieu of such a skill, I will say that something that’s important to me for every one of my projects is to grow at least a little bit on every outing. That doesn’t mean necessarily artistically specifically. Sometimes it can be as simple as learning something about myself, something that works, or doesn’t work. Because I’ve found knowing that things that do not work or that we do not like can be just as valuable as finding the ones that do work. Don’t laugh, but for me, the best life charge is going on an adventure! Because of the international influence on my upbringing, I’m always a bit fired up with every trip I take. Because I travel frequently for work, as I do quite a bit of international shooting, I try to mix in some travels for fun every chance I get. There’s also so many fantastic places in South Florida to visit, from equestrian experiences in Hollywood, to the rich art deco-infused history of Miami, to the majesty of the Everglades themselves. I’m learning something new every single day, and that charges me up and inspires me to continue to expand the stories that I’m telling through my films. MLM: In addition to your film work, you're also involved in various philanthropic endeavors. How do you balance your passion for storytelling with making a positive impact on the world around you? CR: I’m a big believer in all things in balance. Of course, balance can have a different meaning for different people, so I’d encourage everyone to sort out what that means to them! But for my part, philanthropic endeavors have always been very important to me. I’ve been interested in horses ever since I befriended my very first one in Australia when I was a child. For that reason, the opportunity to be involved in equestrian medical research is my way of continuing my connectivity to those wonderful animals that helped shape some of the joy of my life. I’m also really thrilled to be involved with our own local water brand, Jovē. The brand promotes healthy and clean drinking water both here in the states, and internationally as well. It’s such a critical component for life that we all have access to clean water, and I’m always honored to support local Floridian initiatives. All of these causes and initiatives that I’m so thankful to be a part of feed into all of my stories across television and film. There’s so many that probably seem disconnected in life, but I can say that if I didn’t participate in these causes and endeavors, my storytelling just wouldn’t be as good because I fear I’d become too one-dimensional. It’s by achieving a balance in my own life that I’ve found my storytelling to be maximized, and much, much more rewarding, too! MLM: We have heard that you are currently living in sunny South Florida. What led you to move to this area and what do you like most about living here? CR: I’m loving every minute that I get to spend in the state of Florida! Funnily enough, the very first trip my wife and I took when we got engaged was here to this state. It’s always held a very special place for me, ever since. Because of how often I travel for my films, and my need to be in Los Angeles and New York, Florida offers a precious refuge that just feels like home. One of the things that I’ve been taken with is the kindness of South Florida and its residents. There’s always so much to do and so much to discover. You’ll find me here whenever I have a break from work, likely writing my next screenplay that you’ll eventually see on the screen. Florida is such a creative hub, and I’m thankful to be a part of it! MLM: Looking ahead, what exciting future projects are on your radar that you care to share? CR: I’m really excited to say that I’m going to have a reunion with one of my producers on Expectations, Dave Hansen. We’ll be collaborating on a film that infuses the notion of the importance of family (what else!) and our internal strife when it comes to our work ambitions. It’s called Boy in the Moon, and it’s about something else we Floridians prize: the space program and NASA! I’m excited to be a part of the journey as this film showcases the life of a young, successful rocket engineer as he struggles a tragedy that strikes with the family that anchors him here on earth, and the pull of his dreams beyond the stratosphere as he makes space travel cheaper, greener, and more available.     Blue Topaz Swimwear is a United States based swimwear fashion brand founded by designer Ingrid Campbell in 2022. The name Blue Topaz was created to represent Ingrid's December birthstone, and blue happens to be her favorite color as well. Ingrid's childhood was spent in New England and South California. She spent most of her time at the beach and also traveled throughout her adult life to many tropical destinations. She always loved summer and hot tropical weather. The beach is where she finds her peace and serenity. Ingrid has a passion for bathing suits. Throughout the entire year, she has always loved collecting bathing suits. Ingrid has always struck a balance in her life. She has a penchant for creativity, fashion and beauty. For many years, she worked on the weekends as a freelance makeup artist for Bobbi Brown cosmetics and MAC cosmetics at several Fashion/Trend Shows. She currently also works as a contractor in the wonderful field of Information Technology and Cyber Security for the federal government in the Washington DC area for the past 23 years. Blue Topaz Swimwear journey started in June 2021, when she posted a photo of herself on Instagram, laying on the beach in one of her favorite bathing suits. The photo went viral on social media. A designer reached out to Ingrid after seeing the photo, to see if she would be interested in being an ambassador or a model for another swimwear brand. This motivated Ingrid to start Blue Topaz Swimwear. The first collection was created for Miami Swim Week¼ - The Shows at Art Basel in November 2022 for "ProjectZed". The themed collection was "Science meets Swimwear". Blue Topaz showcased a lot of sparkle, glitter, fringe swimwear with many galaxy colors and metallic material. Ingrid couldn’t wait to design for this amazing summer show for 2023. She wanted to create a fun and happy celebration for herself, friends and the models. That was absolutely the case a few weeks ago. During Miami Swim Week¼ - The Shows on July 9th, Ingrid’s designs were showcased on the runway! Her designs were created with lots of detail. From high quality fabrics, eight different textures were created, many different styles, beautiful vibrant colors of green, yellow, orange and so many other colors. The beautiful models that were selected to grace the runway for Blue Topaz Swimwear were very diverse in their features. They were perfect for the summer collection. For the first time, a male model was featured, in yellow ombre swim trunks. The energy during Blue Topaz Swimwear Runway Show truly embodied the essence of summer and beach glamour. It was definitely a celebration for all to witness. Ingrid's swimwear is a fit for all!   • Meet Lucas Harrell: Executive Chef at NYC hotspots La Rubia and Her Name Was Carmen

    Lucas Harrell, a San Francisco native of Cuban heritage, was inspired by his talented Cuban immigrant mother who regularly prepared classic Cuban dishes for their family of six. He embarked on his culinary journey working under renowned chefs at Petit Crenn and the two Michelin-starred Coi restaurant. Later, in New York City, he worked at the Michelin-starred Musket Room under Chef Matt Lambert, eventually becoming the sous chef at Chef Chris Cipollone's acclaimed restaurant, Francie. Francie quickly earned a coveted Michelin star within its first few months of opening. Now, Lucas is the Executive Chef at NYC hotspots La Rubia and Her Name Was Carmen helmed by restaurateur Andres Diaz. An Interview with the Cuban Star Chef Behind Manhattan Hot Spots Her Name Was Carmen and La Rubia in 11 Howard Hotel Growing up in San Francisco, Lucas was exposed to the bounty that northern California produce has to offer at an early age. His mother, an excellent cook in her own right, and an immigrant from Cuba served as an early inspiration as she prepared classic Cuban dishes for his family of six regularly. After high school, he began his culinary career in Portland, Oregon starting as a dishwasher and prep cook. After a few years in Oregon, he decided to move home to San Francisco where he had the privilege of working under talented chefs at Petit Crenn, as well as two Michelin-starred Coi restaurant. In the summer of 2018, he moved to New York City where he worked with Chef Matt Lambert at Michelin-starred Musket Room, which later led to his opening as Sous Chef at Francie in Brooklyn helmed by Chef Chris Cipollone. Francie quickly earned a Michelin star in the first few months of opening. Lucas is now the Executive Chef at the recently opened La Rubia in 11 Howard Hotel and Her Name Was Carmen restaurant in Soho, Manhattan. Can you tell us about your culinary background and experience? My culinary background started when I was 18 years old in Portland, Oregon, where I had moved to attend college. I needed a job and restaurants were some of the only jobs that would consider hiring me with zero experience. I started as a dishwasher/ prep-cook and worked my way up through the ranks. Eventually, after 3 years I decided to make a career out of it and moved home to San Francisco to try and work at some of the prestigious Michelin-rated kitchens. My career then led me to New York City. Having grown up in San Francisco, I was looking for a new challenge, and I had always been curious about living in NYC– even as a child. What inspired you to become a chef, and how did your passion for cooking develop? I fell in love with restaurants almost immediately after my first job. The tight-knit community within each restaurant has given me some of my best friends. Working actively with my hands has always been more engaging for me personally, and I loved the fast-paced environment as well. My passion for cooking developed through making my guests happy through food and the experience we provided at a fine-dining level. Hearing feedback from guests, such as “that's one of the best meals I've ever had” is a feeling that you constantly chase as a Chef. Can you tell us a bit more about the two restaurants where you are Executive Chef: Her Name Was Carmen and La Rubia at 11 Howard. How do they differ? La Rubia is located in Soho on the corner of Lafayette and Howard street on the bottom floor of the 11 Howard Hotel. We are an intimate 40-seat restaurant specializing in classic cocktails, seafood, and raw preparations. Her name Was Carmen, also in Soho, just a short walk away, is a slightly larger operation with a two floor dining room and cocktail lounge. We offer a full service dinner that ideally leads you downstairs to the lounge to dance the night away. Both restaurants lean towards Latin flavors as our owner Andres Diaz is from Colombia, and my heritage on my mothers side is Cuban. While Her Name Was Carmen is seafood leaning, there are still plenty of non-seafood options. What are the signature dishes at Her Name Was Carmen and La Rubia. What makes them unique? Her Name Was Carmen’s signature dishes include the daily grilled fish options. When I first started, the Binchotan Coal Burning Grill in the kitchen wasn't being used as much as I would have like, and grilling is easily my favorite way to prepare fish. You just can't beat the charred smokey flavor. Currently, we are grilling a whole Branzino served with a bright, acidic beurre blanc and a radish and citrus salad served atop the fish. Additionally, we are grilling our Arctic Char, and serving it with blistered and marinated sungold tomatoes, shaved summer squash, and a warm tomato water broth infused with basil and lemon verbena. At La Rubia, our signature is the Grand Rubia Seafood Tower. It showcases what we do best– three layers of our freshest shellfish, which always includes oysters, and occasionally razor clams, lobster tail, ocktail blue crystal prawns from New Zealand, and more; as well as fresh sashimi, and a bowl of our Dungeness Crab. How do you approach seasonal menu planning and creating new dishes? At both restaurants, we change our dishes with the passing seasons as soon as new and exciting products become available. Some changes may be minor while most are complete reworks with new proteins that accompany those ingredients more cohesively. I draw inspiration for new dishes from seasonality, a style of cooking that was drilled into me from earlier in my career cooking in San Francisco. If there are new, delicious, exciting products to work with we are always trying to find a way to incorporate them into the menu. How does your Cuban background influence your cooking? Did you learn from your mother/grandmother? My mother was and still is an excellent cook. While I wasn't necessarily cooking side by side with my mother growing up, I certainly inherited a knack for it through her dedication to serving us home-cooked meals from scratch, which were often classic Cuban dishes like picadillo, ropa vieja, etc. Walking into my grandmother's home, even if you just came from a 6-course meal, she would sit you down and fill up a plate with black beans, rice, plantains, and whatever else she had cooking. She always had something ready to nourish her family and guests, and ultimately, that is what true hospitality is all about. Tell us about La Rubia and Her Name Was Carmen’s signature dessert dish, Terely’s Flan. I wish I felt comfortable calling it MY signature dessert, but this flan recipe has been passed down from my grandmother's family, to my mother (Terely), and now to me. We actually do not know how many previous generations had this exact recipe prior to my grandmother. It's an incredible recipe– very simple to make, but the ratios are just spot on, and it has an incredible creamy texture. Growing up, we ate this flan for special occasions. In the last 5 years, my mother has started her own business in San Francisco called What the Flan SF. Her creativity and work ethic are something I constantly look up to. La Rubia and Her Name Was Carmen serve the classic vanilla flavor; however, my mother’s flan business has developed 10 different flavors, and can even be bought in select grocery stores in San Francisco and privately catered in the Bay Area. To say I'm proud to serve this dessert is an understatement, and it offers a glimpse into my childhood. What’s next for Her Name Was Carmen and La Rubia at 11 Howard? We want to develop La Rubia into a restaurant that becomes a mainstay in Soho. When people think of where to get refreshing raw bar bites and delicious cocktails we want them to think of La Rubia. New Yorkers have so many options when it comes to dining out, so for us becoming one of the first names that comes to mind when the mood strikes for seafood is a challenge we are excited to take on. At Her Name Was Carmen, we are fortunate enough to already have a very strong reputation. Everyone knows that a Thursday, Friday, or Saturday night spent having dinner upstairs followed by dancing downstairs at Carmen is a super fun time that often creates lasting memories with friends. Our goal is to continue to push the cuisine in a direction that evens the playing field with our famous cocktail lounge downstairs. We want people to think of Her name was Carmen as an excellent place to have dinner, dance, and create lasting memories from the second our guests walk through the door.
