Flamed to Perfection: Los Fuegos by Francis Mallmann

If you’re looking for an Argentine parrillada in Miami, you don’t have to go very far, especially if you’re already staying at the oceanfront Faena Hotel centrally located in the heart of Miami Beach.

Down the hall from the luxurious Faena lobby lives Los Fuegos, which is Francis Mallmann’s creation. The award-winning Argentine grillmaster has a passion for cooking and a love for charred meats–each recipe is cautiously curated to perfection. Using local ingredients, he manages to present a dish that is both rustic and sophisticated. Who knew grilling could be so nuanced? Mallmann’s recipes manage to keep what we love most about Argentine cuisine, while adding a little bit of that Miami Beach flair to spice things up.

Every dish and cocktail is beautifully presented. Precision is something that has been mastered at Los Fuegos–afterall, grilling is all about timing, and in this kitchen not a minute is missed.

You could walk into Los Fuegos and have a feast by simply indulging in a variety of appetizers. Nothing says Argentine cuisine like empanadas. The Wood Oven Empanada is a must-try at Los Fuegos. These little bites of heaven are made with prime rib and served with a tomato and onion sauce, and although the sauce is delicious, the empanadas stand on their own. Another outstanding appetizer is the Beets. Although it might not sound super exciting, these beets are absolutely mouthwatering. Cooked in ashes, this colorful dish has great texture and flavors. The pistachio yogurt compliments every bite, making you come back for more. Finally, the Butternut Squash at Los Fuegos is outstanding. Drizzled with shaved black truffle and topped with a parmesan cream, this butternut squash is warm, moist, and sweet–it’s a pleasant surprise amongst a superb collection of dishes.

But, if a parrillada is what you came from, then a parrillada you shall get at Los Fuegos–afterall, there is no better place to get it. There are three parrillada options on the menu, all which come served on a tabletop grill and are great for sharing. The meat, fish, and mixed parrilladas are all wood-fired versions of parrilladas and come served with domino potato, roasted sweet potato, criolla and chimichurri sauce.

In the Wood Fired Meat Parrillada you’ll find the iconic skirt steak, prime ribeye steak, lamb, chorizo and morcilla, and in the Wood Fired Fish Parrillada you’ll find the branzino, seabass, snapper, prawns, and octopus. The Mixed Parrillada is a collection of both—maybe the best of both worlds.

In addition to parrilladas and amazing appetizers, Los Fuegos also has a strong selection of main dishes. Mallmann’s Beef Tenderloin Milanesa, is inspired by Mallmann’s mother and is the only dish he brings to all his restaurants—this dish makes you feel just at home. Another menu-favorite was the Chilean Sea Bass. Cooked in the wood oven, this flaky fish served with crispy black rice is a light delight.
