The St. Regis Bal Harbour Resort, a Forbes Five-Star and AAA Five Diamond property for thirteen consecutive years, is proud to announce the grand opening of BH Prime, a bold new dining concept that redefines the classic steakhouse for today’s discerning traveler. As the first dedicated steakhouse concept introduced at the resort, BH Prime represents a significant and permanent addition to The St. Regis Bal Harbour’s culinary program. The restaurant marks a complete transformation of the space formerly occupied by BH Burger Bar, elevating the ambiance, cuisine, and experience into a refined dinner-driven destination. Long requested by guests seeking a proper evening dining experience that mirrors the elegance of the resort itself, BH Prime arrives as the answer to that call.
At the heart of BH Prime is a culinary philosophy rooted in excellence and authenticity. From seasonal ingredients sourced from local purveyors to prized international offerings, the menu blends timeless steakhouse favorites with subtle global influences. Signature dishes include the Miyazaki A5 Japanese Wagyu NY Strip, one of the world’s most exquisite cuts of beef, the 32 oz. USDA Prime Longbone Tomahawk and the 14 oz USDA Prime Boneless Ribeye, finished tableside with a dramatic smoking presentation. The raw bar features a curated selection of delicacies including Chilled Jumbo Shrimp, Seasonal Oysters and the opulent Royal Seafood Tower. For those seeking seafood entrées, standout dishes include the Miso-Glazed Sea Bass with coconut ginger sauce and baby bok choy, and the Ora King Salmon with Castelvetrano olives and fregola sarda. In a nod to the concept’s former identity, BH Prime will also offer a selection of elevated burgers like the richly layered Bison Burger, topped with maple pepper bacon, cambozola cheese, and a sweet-spicy Buffalo Trace BBQ sauce, alongside bold starters such as Angry Shrimp in lobster-infused butter and indulgent sides including Truffle Parmesan Steak Fries and Gruyère Mac & Cheese.

BH Prime will debut an exclusive caviar program in partnership with Petrossian, offering guests access to the world’s most exceptional selections, from Tsar Imperial Ossetra to Royal Daurenki.
The experience extends beyond the plate with a thoughtfully crafted wine list and craft cocktail program developed in collaboration with Signature Cocktail & Co, featuring internationally renowned mixologists from Hong Kong, Singapore, and Bangkok. Guests will also find an indulgent dessert menu led by Executive Pastry Chef Nagypsy, with highlights like Salted Caramel Crème Brûlée and the signature BH Triple Chocolate Ganache Cake, made with Jivara milk chocolate, Manjari dark chocolate cremeux, cocoa nib tuile and Cuban coffee ice cream.

The soul of BH Prime lies in a globally seasoned team whose vision and expertise shape every element of the experience. The concept was brought to life by General Manager Carlo Javakhia, an award-winning restaurateur whose career spans successful restaurant openings in Athens, Dubai, and Doha. Named Restaurateur of the Year for the Middle East and Africa in 2019, Javakhia brings a deep understanding of what resonates with international diners. He is joined by Executive Chef Adrian Colameco, a Florida native who blends classical training with Latin soul. “With the menu at BH Prime, we set out to create a true steakhouse experience—timeless, yet globally inspired,” says Colameco. “We’re marrying the traditions of a classic steakhouse with refined techniques and flavor profiles that reflect both my roots and the international energy of our St. Regis guests.” Supporting the leadership is a hotel management team with serious culinary pedigree, including Fabien Gnemmi, a French-born former executive chef with experience in Michelin-starred restaurants and ultra-luxury hotels across Europe and the U.S.

The newly refreshed space embraces its original charm with a blend of leather, dark wood, and warm textures, creating a timeless yet unpretentious setting that lets the ingredients and flavors take center stage. BH Prime will also showcase rotating works curated by Opera Gallery, the hotel’s on-site art gallery, infusing the dining experience with world-class artistry. Offering 38 indoor and 20 outdoor seats, BH Prime is open daily from 4:30 PM to 11:00 PM and welcomes both resort guests and the public. In-room dining is available for hotel guests starting at 4:30 PM.
