- 5 Industry Leaders Share Their 2022 Food Trend Predictions
Photo Credit: Agave Bandido Flavor Experiences Matt Faul, CEO of Wolverine Management I predict more unique flavor experiences will happen next year. With the boom of mixologists and culinary creatives, diners are now able to experience explosions of unique flavors and ingredients unlike ever before. The rise of social media and influencers, who like to treat food as a flavorful journey, creates a demand for restaurants and culinary experts to find the next trend or flavor wave that can create an impact. Diners want to bite into something or sip a cocktail with a flavor journey that has a beginning, middle and end. Photo Credit: PAOW! Plant-based proteins and Sustainable Diets Alex Kramarchuk, CEO of Future Food Enterprises, producer of PAOW! (People and our World) Plant-based proteins. The increasing demand for plant-based proteins is expanding to more consumers than ever. Whether it's for health reasons, to help tackle climate change, or concerns for animal welfare, the love for meatless alternatives continues to increase. Sustainable diets. Many people want to understand the ingredients in their food and are generally seeking a diet with fewer and/or all-natural, locally-sourced ingredients. Because of this, versatile meatless alternatives continue to make their way onto menus, and not just strictly vegan/vegetarian restaurants. Photo credit: Uchi Miami Hibiscus Chef Dina Butterfield, Uchi Miami I believe there are some ingredients being ‘discovered.’ One of them is hibiscus; lately I have several people asking about it for desserts, cocktails and crudos. I was raised drinking "agua de Jamaica." It's served in every Mexican household during lunch which is our main meal. It's sold in the markets and in the ice cream shops. Jamaican flowers can be cooked and utilized as a savory or sweet dish. Hibiscus is a healthy flower and is considered a diuretic so it has the potential to be the next superfood. Photo Credit: katiejuneburton Vegetables Chef Josh Elliott and 3x James Beard nominee, chef Niven Patel at Orno I really love to see the way vegetables are becoming a focus. At Orno we have about half the menu being vegetables. Actually sticking to the seasonal produce like with our heirloom tomatoes right now is so special. For us as cooks it's good to challenge ourselves and step out of the meat and fish game especially working under a Chef like Niven who is primarily vegetarian. Our most popular dishes right now are onion and sunchokes. I love that we are looking at it as something that's substantial, not just a side dish and treating it with respect. I predict cabbage and okra are going to be really big next year! Photo Credit: Old School Hospitality Polynesian/Tiki Culture Paul Flanigan, Founder of Old School Hospitality In 2022, I expect to see a rise in Polynesian/Tiki Culture, especially in light of the pandemic. Tiki culture is trans formative, like being somewhere completely different from your present local, a half a world away. Tahiti, Fiji and Bora Bora just sound exotic. People want fun, laughter and beach drinks, aka RUM! Vodka was hot, then tequila, then whiskey and whiskey bars. Now it is time for rum drinks to have their moment again to give people that good 'Tiki Time' feeling.

- Ride the Waves in Orlando and Miami
As Brandon is telling me to put my feet in the wakeboard boots – or bindings, as they’re called – I am remembering the advice I got before buying my ticket here at the Orlando Watersports Complex: don’t overthink it. I scoot my rump off the dock and into the water, wearing a helmet and life jacket, my feet inside the boots attached to the wakeboard. Determined not to overthink things, I do just that, repeating in my mind everything Brandon has advised: Keep my dominant foot in the back. Bend my knees. Shift my weight slightly back, but not too much. Gaze up at a point on the horizon. Keep my arms straight out, hands clasping the handle attached to the cable. And of course, relax. Austin Hayward, 20, takes to the advanced area with jumps and tricks. - Julie Fletcher for VISIT FLORIDA Learn how to wakeboard, waterski, kneeboard, wake surf or wakeskate. - Julie Fletcher for VISIT FLORIDA While I’m still running down my mental checklist, Brandon starts the cable. The long line jerks at the handle in my hands, slowly pulling me up. In the next instant – wham! I crash down, backward, water rushing into my face and nose. Luckily, I’ve purchased the Get Up Guarantee. But I fear Brandon has a challenge on his hands. Jeff Miller, of Wisconsin, and his son take a course. - Julie Fletcher for VISIT FLORIDA WHAT YOU’LL FIND The Orlando Watersports Complex off Florida State Road 528 has been around since 1999. (The newer Miami Watersports Complex is located in Amelia Earhart Park in Hialeah.) Both offer wakeboarding, wakeskating, wakesurfing, kneeboarding, stand-up paddleboarding, tubing and waterskiing. The Orlando facility has a boat lake and three cable systems. While it hosts Wake Games and Pro Tour Stops, it specializes in offering something for all levels – particularly for newbie like me, wakeboarding for the first time. On my way to the cable system for my beginner’s lesson, I’d walked along a long narrow boardwalk. Off to my left was the advanced cable, where wakeboarders and wakeskaters were riding rails and doing 360-degree spins. And on my right was the standard cable that moves at a constant 18 mph and allows newer riders the chance to take wide turns and practice new skills. I’d be heading there next – if I could get up on the wakeboard at all. RIDING THE WAVES “Don’t muscle into it,” Brandon had called out after I’d fallen. I had to stop pulling the cord toward me. I grab the handle bobbing in the water. Brandon re-starts the cable. I turn off my mind. The muscles in my thighs, hips, calves take over, holding me up as the board slices through the water. I look down, throwing myself off-balance. Spash! I fall again. The complex offers fun for kids and adults alike. - Julie Fletcher for VISIT FLORIDA Again, back up. This time, I do as Brandon says. I look up toward the horizon. He is right. It keeps me balanced. I’m riding the wakeboard. Brandon is cheering, following me along the boardwalk to the end of the cable line. I did it! But as I ready to take on the next level – the standard cable – thunder clouds roll in. The cables are temporarily stopped. Like the other patrons, I have the option to wait out the lightning storm and enjoy my four hours when it passes. Or come back and use the time at a later date with the purchase of a basic ride. With my new-found confidence, I decide to come back later and bring my husband and help coach him through the beginner stage. The trick, I will tell him, is not to overthink it. - Gucci Presents a One-of-a-Kind Vinyl
The narrative of Gucci has often drawn from the world of music, whose foundation is built upon self-expression – a pillar of Alessandro Michele’s vision for the House. This initiative explores the universal language of self-expression through music and personal adornment while celebrating the talent of Billie Eilish, an artist whose embrace of authenticity speaks to the core values of the House. The set, which also includes the new Gucci Nail Stickers, created to celebrate House emblems through the GG monogram and lettering presented in multiple shades and styles, is available at 10 Gucci boutiques worldwide.
