Chef, restaurateur, and author Yotam Ottolenghi will open his first restaurant in the Netherlands in early 2026, marking a return to Amsterdam nearly three decades after living in the city. The restaurant, titled Ottolenghi Amsterdam, will be located inside the newly rebranded Mandarin Oriental Conservatorium, Amsterdam, situated in the Museum District near landmarks such as the Rijksmuseum and the Concertgebouw.

The opening coincides with the transformation of the former Conservatorium Hotel into Mandarin Oriental Conservatorium, Amsterdam in January 2026. Ottolenghi Amsterdam will be a central part of this repositioning, joining the hotel’s culinary offering as a year-round dining destination for both locals and international guests.

Ottolenghi, known globally for his cookbooks Plenty, Simple, and Comfort, previously lived in Amsterdam in the mid-1990s while completing his postgraduate studies before relocating to London. There, he trained at Le Cordon Bleu and went on to establish the Ottolenghi group, which now includes ten locations in the UK and an international outpost at Mandarin Oriental, Geneva, opened in 2025.
The Amsterdam restaurant will be inspired by Ottolenghi’s London restaurant ROVI, with a vegetable-forward menu built around seasonal produce, bold flavors, and techniques such as fermentation and pickling. The restaurant will serve breakfast, lunch, and dinner, emphasizing shared plates made primarily with locally sourced ingredients.

Designed within the hotel’s iconic glass atrium, the space will feature warm wood tones and red and gold accents, blending the feel of a neighborhood restaurant with Ottolenghi’s established visual identity. The concept is intended to function as a social hub, connecting hotel guests with the surrounding cultural community.

Additional details, including the opening date, head chef, menu, and reservations, will be announced in early 2026. Updates are expected to be shared through Mandarin Oriental’s official digital channels.
