Immersive Dining Collaboration by 'We Are Ona,' Sabine Marcelis, & José Andrés Group to Debut at Andaz Miami Beach During Art Basel 2025

WE ARE ONA will introduce a new four-day culinary installation at Art Basel Miami Beach, created in collaboration with Andaz Miami Beach, the José Andrés Group, and designer and artist Sabine Marcelis. Presented from December 1–4, 2025, the experience blends design, contemporary cuisine, and site-specific art in an oceanfront setting.
Curated by WE ARE ONA founder Luca Pronzato, the project brings together Marcelis—known for her sculptural use of light and material—and José Andrés Group, the team behind concepts such as Aguasal and Bar Centro at Andaz Miami Beach. The collaborators will transform the interior into a sensorial environment where lighting, stone, and food intersect.
A private preview on December 1 will mark Andaz Miami Beach’s first Art Basel event. Beginning December 2, guests can book lunch or dinner seatings featuring a menu by José Andrés Group, including dishes such as Cobia “Pastrami” Crudo with coastal rub and mustard vinaigrette, Spanish Octopus with hazelnut emulsion, and Braised Short Rib with truffled potato purée. Beverage pairings are provided by House of Suntory.
For this edition, Marcelis partners with SolidNature to create custom stone tables that continue her exploration of light, transparency, and form. The installation builds on themes from her “Beyond The Surface” project for Milan Design Week 2023, here translated into a coastal context through a seven-meter travertine dining table and a multistone sculptural bar. Lighting throughout the space is provided by Bocci.
The pop-up reflects WE ARE ONA’s ongoing pursuit of experiences that merge fine dining with artistic immersion. The Miami presentation also marks the first major cultural event hosted by Andaz Miami Beach following its debut as the brand’s Florida flagship.
