Move over, matcha. One of 2026’s most unexpected food trends is a fruit that has been hiding in plain sight: the banana.
Once largely relegated to smoothies, breakfast bowls and the occasional banana split, bananas are getting a serious menu makeover. According to Technomic’s Ignite Menu data, banana mentions on restaurant menus have climbed 9.6% over the past three years, as chefs and bartenders find new ways to work the familiar fruit into everything from cocktails and coffee drinks to elaborate desserts and savory dishes.
The trend is especially ripe in South Florida, where restaurants and bars are taking advantage of banana’s natural sweetness and tropical associations while pushing it far beyond its typical lunchbox reputation. Across Miami-Dade, Broward and Palm Beach counties, the fruit is showing up flambéed tableside, folded into decadent brunch dishes, shaken into cocktails and even paired with unexpected savory ingredients.

Behind a tucked-away corridor lined with glowing bistro lights, The Alley feels worlds away from Ocean Drive. Here, award-winning Chef Laurent Tourondel is giving the banana trend an Italian passport with the Bananamisu, a clever cross between tiramisu and banana pudding. Built with mascarpone cream, gianduja chocolate, fresh banana, cinnamon and condensed milk, it’s exactly the kind of dessert that’s turning bananas into the season’s most exciting ingredient.

Longtime Fort Lauderdale favorite Shooters Waterfront is giving the banana an ambitious makeover with its Caribbean Bread Pudding Flan, layering warm Caribbean bread pudding with silky flan before topping it with Bananas Foster ice cream and a crisp brown butter tuile. Think of it as the dessert equivalent of a greatest-hits album, with bread pudding, flan and Bananas Foster all sharing the same plate.
At Vilebrequin La Plage, bananas are making a splash behind the bar. The Coral Mirage reimagines the flavor in cocktail form, combining Captain Morgan rum, Mr Black coffee liqueur, pineapple, lime, banana cordial and pomegranate for a tropical sip that’s equal parts refreshing and unexpected.

Fort Lauderdale’s Casa Sensei has won “Best Asian Restaurant” by Fort Lauderdale Magazine for six years—no doubt for its harmonic blend of Latin and Pan-Asian flavors that are both modern and traditional, including the sake menu. The selection includes Aladdin Nigori Sake, an unfiltered, cloudy Japanese sake known for its distinct notes of banana and pear. The vivid aromas make for a sweet, fruity sip to pair with one of Casa Sensei’s sushi rolls.

UVA Restaurant & Bar, located at Novotel Miami Brickell, serves up a sweet start to the day with its Nutella-Banana Stuffed Pain Perdue, available daily during breakfast from 6:30-10:30 a.m. Thick-cut challah bread is stuffed with creamy Nutella and fresh banana, then topped with seasonal berries and finished with a house-made coffee butterscotch caramel.
