Mandapa Brings Zero-waste Culinary Residency to Zadún Los Cabos May 8–22, 2025

Mandapa, a Ritz-Carlton Reserve in Bali will bring an exclusive culinary residency to Zadún Los Cabos, a Ritz-Carlton Reserve in Baja California Sur from May 8 to 22, 2025, marking the first culinary takeover between properties in the Ritz-Carlton Reserve portfolio.

The residency will focus on Mandapa’s zero-waste culinary philosophy, highlighting sustainable sourcing, craftsmanship, and storytelling through food. Guests at Zadún will be able to take part in cooking classes, interactive demonstrations, and curated tastings that showcase Mandapa’s approach to destination-driven gastronomy.
Zadún’s general manager, Wadim Alvarez, said the collaboration reflects a shared commitment to travel that encourages deeper cultural understanding and expands the resort’s evolving culinary program, which includes fire-forward Latin dining and workshops such as wine-making and cacao tastings.
Executive Sous Chef Eka Sunarya of Mandapa will lead the residency, presenting a curated menu that draws on community-based sourcing and inventive zero-waste techniques. Known for his work at Kubu, Mandapa’s bamboo restaurant, Chef Sunarya develops dishes with ingredients sourced within roughly 100 kilometers, using methods such as sous-vide and other modern techniques.





Mandapa is the only three MICHELIN Key resort in Bali and is listed among The World’s 50 Best Hotels in 2025. The Los Cabos residency will allow guests in the Americas to experience its recognized gastronomy through this limited engagement at Zadún.
