Four Seasons Hotel Miami Welcomes NUNA by Chef Jaime Pesaque

The culinary scene in Brickell just welcomed a bold new addition. NUNA, the highly anticipated Nikkei dining concept by award-winning Peruvian chef Jaime Pesaque, is now open at Four Seasons Hotel Miami. Located inside the former Edge Brasserie space, NUNA is a limited-time dinner experience blending the precision of Japanese technique with the vibrant soul of Peruvian cuisine.
Chef Jaime Pesaque, best known for his acclaimed Lima restaurant Mayta—named one of The World’s 50 Best Restaurants—has brought his refined vision of Nikkei cuisine to Miami for the first time. “At NUNA, we’re taking Nikkei cuisine beyond the expected,” says Pesaque. “This is a contemporary, ingredient-driven expression of my heritage and my travels. Miami’s energy is the perfect backdrop.”
Now welcoming guests nightly, NUNA’s menu showcases signature dishes like:
NUNA’s Ceviche – Scallops, octopus, shrimp, crispy calamari, and rocoto leche de tigre
NUNA Roll – Tuna, acevichado sauce, avocado, and crispy shrimp
Saltado al Wok – A bold stir-fry of beef and lobster, infused with Nikkei flavors

The experience also includes a curated beverage program highlighting Japanese whiskies, pisco, sake, and a mix of signature cocktails and mocktails designed to complement the menu's dynamic flavor profiles.
Chef Jaime Pesaque, born and raised in Peru, trained in Europe and worked in Michelin-starred kitchens including El Celler de Can Roca in Spain. In 2008, he launched Mayta in Lima, which has since become a global benchmark for modern Peruvian cuisine. Under his leadership, Mayta entered Latin America’s 50 Best Restaurants in 2019, won the Highest Climber Award in 2020, and was later recognized on The World’s 50 Best Restaurants list in 2022.
