Novotel Miami Brickell has introduced a new weekend brunch served every Saturday and Sunday from 10:30 a.m. to 3 p.m. at both Vista Rooftop Bar & Lounge and UVA Restaurant & Bar, offering everything from skyline views and bottomless cocktails to elevated takes on classic brunch favorites.

Vista Rooftop Bar & Lounge pairs panoramic views of Biscayne Bay and the Brickell skyline with a lively, open-air atmosphere overlooking the hotel's climate-controlled rooftop pool, while UVA Restaurant & Bar offers a bright, contemporary bistro setting that's equally inviting for relaxed weekend dining.

The mind behind this new menu is Executive Chef Yohsy Hernandez, whose dishes combine French technique with the bold flavors of his Cuban heritage. Highlights include a Huevos Rancheros served with black bean purée and avocado, and Chicken & Waffles Elevated finished with hot honey and maple syrup. For something more rich, the menu offers a decadent Short Rib Benedict topped with truffle hollandaise or a Croque Madame layered with truffle béchamel, jamón and Gruyère.
Guests craving something sweet can opt for Tres Leches French Toast topped with dulce de leche and glazed strawberries or Chocolate Overload Pancakes piled high with Nutella, whipped cream and fresh berries.
