Chef Yasu Tanaka and Spicy Hospitality Group Launch YASU Omakase, an 8-Seat Sushi Counter in Miami

Michelin-recognized Chef Yasu Tanaka and Spicy Hospitality Group have opened YASU Omakase, a new eight-seat omakase counter in Miami. The concept follows the success of Sushi Yasu Tanaka and introduces Tanaka’s most intimate and personal dining experience to date.

Designed as a direct dialogue between chef and guest, YASU Omakase centers on a traditional approach to sushi, shaped by Tanaka’s roots in Yamanashi, Japan. Each service seats only eight guests and unfolds over a structured progression that begins with three to five otsumami, followed by nigiri, miso soup, a signature hand roll, and a seasonal dessert.
At the heart of the space is a 600-year-old hinoki wood counter, carved from timber historically reserved for Japanese temples and shrines. The counter anchors the experience and reinforces the focus on ritual, material integrity, and craftsmanship. A second private room with its own hinoki counter is planned to open in the coming months for small gatherings.
The menu consists of a single 14 to 16 course omakase that changes frequently based on seasonality and sourcing. Seafood is primarily flown in from Tokyo’s Toyosu Market, complemented by select Florida species. Rice from Niigata is prepared with seasonal adjustments, and house-seasoned soy sauces are tailored to specific fish. Produce and eggs are sourced from regional farms.
Chef Raymond Li collaborates closely with Tanaka on the project, contributing subtle South Florida influences that ground the experience in its Miami setting while preserving its traditional foundation.
The beverage program focuses on a curated sake selection featuring rare and limited bottles, available by the glass or as pairings. A concise wine list was developed to align with the precision and restraint of the menu.
The design blends Japanese craftsmanship with Nordic minimalism. Handcrafted kumiko woodwork, custom ceramic tableware from Yamanashi, and Scandinavian PP Møbler seating define a space intended to remain quiet, focused, and immersive.
With YASU Omakase, Tanaka and Spicy Hospitality Group expand their presence in Miami’s dining scene, offering a format that prioritizes restraint, technique, and direct connection between chef and guest.
