Café Bastille Brings Parisian Brunch Charm to Weston This December

Weston’s dining scene is about to get a dose of Parisian chic. Café Bastille, the French-inspired café known for its all-day brunch, stylish ambiance and cult-favorite pastries, is officially opening its newest location December 2025 in Weston Town Center. For locals who have trekked to Downtown Miami, Miami Beach or Fort Lauderdale for their brunch fix, this fourth South Florida outpost brings the beloved brand closer to home.
A Fresh, Airy Slice of Paris in Weston
Set on a prominent corner of the Weston Town Center, the café’s signature light green exterior is impossible to miss. Inside the 2,100-square-foot space, Café Bastille leans into an elegant but relaxed Paris-meets-South-Florida aesthetic. Expect white and gold details, soft sage and basil tones and warm wooden chairs that evoke a European café terrace. The space seats up to 94 guests indoors, thanks in part to floor-to-ceiling windows that fully open to create an airy, open-concept feel.
For those who prefer brunch with a breeze, the outdoor area offers an additional 16 seats, including charming bistro tables and a loungey café couch perfect for sipping a latte while catching up with friends.
“We’re so excited to finally bring Café Bastille to Weston,” said co-founder Estelle Bellegy. “Our goal is to become a true neighborhood café, a place people can stop in for a weekday breakfast, a lingering weekend brunch or a quick moment of comfort whenever they need it.”

A New “Conscious Shift”
With the Weston opening, Café Bastille is rolling out a thoughtfully revamped menu centered on simpler, cleaner ingredients across all South Florida locations. The café has committed to removing seed oils from all cooking and now works exclusively with beef tallow, butter and olive oil. Only free-range chicken, cage-free eggs and non-dairy milks made without seed oils make the cut.
This ingredient-focused approach is woven into the new dishes and returning favorites. Highlights include:
Sweet Potato Waffles: Gluten-free and topped with strawberries, maple-pecan butter, homemade granola and candied pecans.
Harvest Chicken Toast: A vibrant mix of tomato, feta, arugula, pickled onions and lemon over toasted sourdough.
Avo & Eggs: A minimalist, nutrient-forward plate with half an avocado, eggs any style and multigrain sourdough.
New bowls also join the lineup, including the Spicy Bowl, quinoa, arugula, veggies and spicy mayo, and Stella’s Fav Bowl with lentils, short-grain rice, avocado and cilantro aioli. Guests can add proteins like chicken thighs, salmon or beef fillet for an extra boost.

Matcha Lovers, This One’s For You
Café Bastille is going big on matcha in Weston. Six new iced-only matcha drinks bring tropical and dessert-inspired twists:
Mango Foam Matcha
Coconut Cloud Matcha
Tiramisu Matcha Latte—yes, it includes mascarpone and ladyfinger.
Even the cocktail menu is getting a matcha makeover. The Matcha Mojito and Matcha Tini headline the new bar program, alongside playful indulgences like the Tiramisu Tini. Of course, longtime favorites stick around, think Passion Fruit Margaritas and bottomless weekend classics including Mimosas, Bellinis and Sangria pitchers.
For nonalcoholic sips, guests can choose from fresh-pressed juices, the new Detox Green blend or smoothie options like the blueberry-forward Beauty Protein.

Fan Favorites Return (Pastries Included)
Regulars will still find the dishes that helped make Café Bastille a brunch staple. The beloved Bae’s Shakshuka, French Breakfast Burrito and the French toast lineup (including that irresistible Dulce de Leche Croissant Bread Pudding) all make their Weston debut. And yes, the fresh pastries, from Pain au Chocolat to Crème Brûlée Croissants, will be baked daily.
