Brunch is Back at Verde with a Stunning Menu Refresh

There’s brunch, and then there’s Verde brunch. Nestled beside one of Miami’s most striking cultural institutions, Verde at Pérez Art Museum Miami (PAMM) has introduced a bold new brunch lineup and a refreshed all-day menu that redefines weekend dining. The restaurant’s waterfront terrace provides breathtaking views of Biscayne Bay, where the sparkling blue waters and passing boats create a serene yet lively backdrop for basking in the South Florida weather.

Led by Executive Chef Valeri Fuentes of Constellation Culinary Group, Verde is reintroducing itself to the city’s dining scene with a menu that mirrors the art inside PAMM. Each dish is thoughtfully composed to reflect the museum’s exhibitions - visually striking, artfully plated and full of bold, expressive flavor. Infused with Fuentes’s Venezuelan roots and inspired by Miami’s global culinary tapestry, Verde’s menu transforms every meal into an extension of the museum experience, where food and art seamlessly intertwine. 

A New Chapter for Brunch in Miami 

Available Saturdays and Sundays, Verde’s new brunch menu delivers color, character and plenty of culinary charisma. Take the Caracas Eggs Benedict, a homage to Chef Fuentes’ Venezuelan roots, with beet arepa, smoked salmon, chive hollandaise, pickled red onion and dill. The Coladita Tiramisu Pancakes feel like a love letter to abuelita’s kitchen, topped with coladita syrup, mascarpone and Chantilly cream, fresh blackberries, blueberries and a dusting of cacao.

Other standouts include the Yellow Shakshuka with poached eggs and mango over roasted yellow tomato and peppers, and the Guava Short Rib Bao Buns, where Latin and Asian flavors collide in a slow-cooked, sweet-savory delight. And if you’re after something fresh from the garden, the Verde Eggplant, stuffed and topped with za’atar yogurt, masala chickpeas and vibrant herbs, is an edible masterpiece.



More Than Just Brunch

While the weekend menu grabs the spotlight, Verde’s refreshed all-day offerings deserve their own moment. The new “From the Earth” section features cravable small plates like the Street Corn Arancini, stuffed with caramelized corn risotto and topped with lime crema, queso fresco, bacon, Tajin, panela and cilantro, and the Lemon & Truffle Grilled Oyster Mushroom Pintxos, served with beet tzatziki, pomegranate, toasted pistachios and spicy achiote oil. The Artist’s Palette is a standout featuring truffle turmeric hummus, beet tzatziki and baba ghanoush, which guests can actually paint with on a side of za’atar flatbread with a palette knife. 



Hearty mains like the 16-hour Short Rib Ragu with egg pappardelle and grana padano bring comfort and sophistication, while the Camarones al Ajillo Pizza adds a coastal flair with garlic butter shrimp, sweet corn and banana pepper on a stone oven-baked crust. 



End on a sweet note with new desserts, including Fireman Derek’s New York-style Churro Cheesecake with dulce de leche sauce and panela and Cielito Lindo, a grand tribute to Miami’s sunsets featuring shortbread, Greek yogurt, white chocolate bavarois, clementine, mango, pomegranate, ginger cookies, hibiscus coulis, cotton candy and citrus dust. 



Art & Atmosphere

Beyond the food, Verde’s setting is nothing short of inspired. With greenery cascading from the roof and a terrace that overlooks the bay, the restaurant seamlessly blends art, nature and cuisine. It's the kind of place where the line between indoor and outdoor blurs, where you can sip mimosas in the breeze, then stroll through the sculpture garden or Maurice A. Ferré Park post-brunch.
