ARK - Michelin Green Star Vegan Dining Celebrating Sustainability, Innovation, & Unforgettable Flavors.

When I first heard about ARK in Copenhagen—one of the world’s few fully vegan restaurants recognized by the Michelin Guide—I knew I had to experience it. ARK is the first restaurant in the Nordics to earn a Michelin Green Star, a rare honor that recognizes excellence in environmental responsibility. In fact, it is one of only 13 fully plant-based restaurants worldwide to hold this distinction, along with its sister venue, Bistro Lupa. Both are part of The Ark Collection, a group committed to zero-waste, climate-conscious gastronomy.

Led by founder and CEO Jason Renwick—an experienced forager and hospitality entrepreneur—and Executive Chef Brett Lavender, who brings nearly 20 years of Michelin-starred experience from around the world, leads the kitchen. He and his team craft each dish using seasonal, locally sourced ingredients—most harvested within a two-hour drive of the restaurant. Mushrooms are cultivated on their own farm, and techniques like fermentation and infusion are used not only to deepen flavor but also to reduce waste. Several standout dishes feature fermented components using carefully selected yeast strains, including a fermented beet non-alcoholic beverage and a house-made coffee liqueur created from repurposed coffee grounds.

Dinner at ARK begins with an open mind. There is no traditional printed menu; instead, guests are treated to a 9- to 13-course tasting experience with optional beverage pairings—wine, non-alcoholic, or a mix of both. The experience includes a welcome cocktail, still or sparkling water, and ends with coffee or tea, often crafted from thoughtfully reused ingredients.

At the end of the evening, ARK reveals the full menu on seed-embedded recycled paper for guests to plant—a symbolic gesture of its sustainability ethos. That same eco-conscious spirit runs through the space, with Danish design and furnishings made from recyclable materials like seaweed and paper. A laid-back vibe and knowledgeable staff make the experience as thoughtful as it is welcoming.
